  • 1 1/2 pounds ground beef (80–85% lean)
  • 2 pounds russet or Yukon Gold potatoes, peeled and thinly sliced
  • 3 cups beef broth (low sodium preferred)

Directions

  1. Preheat oven to 375°F (190°C). Lightly grease a medium casserole dish.
  2. In a skillet over medium-high heat, cook ground beef until fully browned (8–10 minutes), breaking it into small crumbles. Drain excess fat and set aside.
  3. Peel and slice potatoes into thin rounds (about 1/8 to 1/4 inch thick).
  4. Layer the potato slices evenly in the casserole dish.
  5. Spread the browned beef evenly over the potatoes.
  6. Pour beef broth over the casserole until it nearly covers the potatoes.
  7. Cover tightly with foil or a lid and bake for 45 minutes.
  8. Remove cover and bake an additional 25–35 minutes, until potatoes are tender and the top is browned.
  9. Let rest for 10 minutes before serving.
