This slow cooker hamburger potato casserole is a humble, comforting dish that feels like a warm hug

to create a hearty, satisfying meal.

Layers of thinly sliced potatoes, seasoned ground beef, and creamy mushroom sauce come together under

Ingredients

  • 1 1/2 pounds ground beef
  • 6 medium russet potatoes, peeled and thinly sliced
  • 2 cans (10.5 ounces each) condensed cream of mushroom soup
  • 2 cups shredded cheddar cheese (or Colby Jack), divided
  • 1 teaspoon salt (optional)
  • 1/2 teaspoon black pepper (optional)
  • Nonstick cooking spray or butter (for greasing)

Directions

  1. Prepare slow cooker: Lightly grease the inside of a 5–6 quart slow cooker with
    nonstick spray or butter.
  2. Cook the beef: In a skillet over medium-high heat, cook the ground beef until
    browned and no longer pink (about 6–8 minutes). Drain excess grease and season with salt and pepper.
  3. Slice potatoes: Peel and slice the potatoes into thin rounds (about 1/8 to 1/4 inch thick).
  4. Prepare sauce: In a bowl, mix the condensed soup with 1/2 cup water until smooth.
  5. Layer ingredients:
    • Layer 1/3 of the potatoes on the bottom.
    • Add half of the cooked beef.
    • Spread 1/3 of the soup mixture.
    • Sprinkle 1/2 cup cheese.
  6. Repeat layers: Add another layer of potatoes, remaining beef, more soup, and another
    1/2 cup cheese.
  7. Top layer: Finish with remaining potatoes and spread the rest of the soup mixture on top.
  8. Cook: Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until potatoes are tender.
  9. Add final cheese: About 20–30 minutes before serving, sprinkle remaining cheese on top.
    Cover and cook until melted and bubbly.
  10. Rest and serve: Let sit uncovered for 5–10 minutes, then serve warm.

Serving Suggestions

Serve with green beans, a fresh salad, or sliced vegetables. Add dinner rolls, biscuits, or toast to soak up
the creamy sauce. You can also serve it over rice or egg noodles to stretch the meal.
