Ingredients:
1 lb (450g) chicken breast, thinly sliced
3 cups broccoli florets
1 large carrot, sliced
2 tablespoons vegetable oil
Salt and pepper, to taste
For the Sauce:
3 tablespoons soy sauce
2 tablespoons oyster sauce
1 tablespoon cornstarch
1 tablespoon water
1 teaspoon sesame oil
1 teaspoon sugar
2 cloves garlic, minced
1 inch piece of ginger, minced
Instructions:
1. Prepare the Sauce:
In a small bowl, whisk together soy sauce, oyster sauce, cornstarch, water, sesame oil, and sugar until smooth. Set aside.
2. Cook the Chicken:
Season the chicken slices with salt and pepper.
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
Add the chicken and stir-fry until it is nearly cooked through and slightly browned. Remove the chicken from the skillet and set aside.
3. Stir-Fry Vegetables:
In the same skillet, add the remaining tablespoon of oil.
Add the minced garlic and ginger, sautéing for about 30 seconds until fragrant.
Add the broccoli and carrot slices. Stir-fry for about 4-5 minutes or until the vegetables are just tender but still crisp.
4. Combine Chicken and Vegetables:
Return the chicken to the skillet with the vegetables.
Pour the sauce over the top, stirring to combine. Cook for an additional 2-3 minutes, or until the sauce has thickened and everything is heated through.
5. Serve:
Serve your chicken and broccoli stir-fry hot, ideally over a bed of steamed rice or noodles.
