Chocolate Lava Cake Recipe
Ingredients:
1/2 cup (1 stick) unsalted butter, plus more for greasing
1 cup bittersweet or semisweet chocolate chips
2 eggs
2 egg yolks
1/4 cup sugar
2 tablespoons all-purpose flour
Pinch of salt
Ice cream or whipped cream, for serving (optional)
Equipment:
Oven-safe ramekins (4 to 6 depending on size)
Mixing bowls
Double boiler or microwave for melting chocolate
Instructions:
Preheat the Oven and Prepare Ramekins:
Preheat your oven to 425 degrees Fahrenheit (218 degrees Celsius).
Grease four to six ramekins with butter and place on a baking tray.
Melt Chocolate and Butter:
Combine the butter and chocolate in a double boiler over simmering water or in a microwave-safe bowl. Melt them together until smooth, stirring occasionally. Set aside to cool slightly.
Mix Eggs and Sugar:
In a separate bowl, whisk together the eggs, egg yolks, and sugar until thick and pale.
Combine Ingredients:
Fold the melted chocolate mixture into the egg mixture. Then sift in the flour and salt, folding until just combined.
Divide the Mixture:
Pour the batter into the prepared ramekins, filling them about three-quarters full.
Bake:
Bake for 12-14 minutes, or until the edges are firm but the center is still soft.
Serve Immediately:
Remove from oven and let sit for about 1 minute. Carefully invert each ramekin onto a plate. Serve immediately, optionally with ice cream or whipped cream on the side.
