Ingredients:

  • 1 can (20 oz) crushed pineapple, undrained
  • 1 box (3.4 oz) instant vanilla pudding mix
  • 1 container (8 oz) whipped topping (Cool Whip), thawed
  • 1 cup miniature marshmallows (optional but adds great texture)
  • ½ cup shredded coconut (optional)
  • ½ cup chopped pecans or walnuts (optional)
  • ½ cup sour cream (optional, for a tangier flavor)

Instructions:

  1. Mix Pineapple and Pudding:In a large mixing bowl, stir together the crushed pineapple (with juice) and the instant vanilla pudding mix.

    Mix well until thickened — about 2–3 minutes.

  2. Add Remaining Ingredients:Fold in the whipped topping (Cool Whip) until well combined.

    Stir in marshmallows, coconut, and nuts if using.

    If you like it creamier and tangier, fold in the sour cream too.

  3. Chill:Spoon the mixture into a glass dish or serving bowl.

    Cover and refrigerate for at least 2 hours (overnight is best) to let flavors blend.

  4. Serve:Serve chilled as a light dessert or sweet side dish.

Tips:

  • You can swap crushed pineapple for pineapple tidbits for a chunkier texture.
  • Add maraschino cherries for color and a touch of retro flair.
