Banana Bread Cake with Cream Cheese Frosting
Ingredients
Banana Cake
- ½ cup (1 stick) butter, softened
- 1½ cups granulated sugar
- 2 large eggs
- 1 cup sour cream (full-fat preferred)
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 1 cup mashed bananas (about 3 bananas)
Cream Cheese Frosting
- ½ cup (1 stick) butter, softened
- 1 bar (8 oz) cream cheese, softened (full-fat preferred)
- 1 teaspoon vanilla extract
- 3 cups powdered sugar
- 2 tablespoons heavy whipping cream
Instructions
- Prepare the Cake: Heat oven to 350°F (175°C). Spray a 9×13 baking dish with cooking spray and set aside.
- Cream butter and sugar together until light and fluffy (mixture may look crumbly at first, keep mixing until smooth).
- Add eggs, sour cream, and vanilla. Beat until creamy.
- Add flour, baking soda, and salt. Mix on low just until combined.
- Fold in mashed bananas. Spread batter evenly in prepared baking dish.
- Bake for 25–35 minutes, or until a toothpick inserted in the center comes out clean or with moist crumbs. Edges and top should be lightly browned.
- Let cake cool completely before frosting.
Make the Frosting:
- In a large bowl, beat butter and cream cheese until smooth.
- Add vanilla, powdered sugar, and heavy cream. Beat until thick, creamy frosting forms.
- Adjust consistency with more sugar or milk if needed (frosting should be thick enough to slice cleanly).
Frost & Serve: Spread frosting over cooled cake. Garnish with banana slices and chopped walnuts before serving.
