Ingredients:
For the base:
– 120 g of flour
– 100 g of sugar
– 8 g of baking powder
– 3 eggs
– a sachet of vanillin
For the mascarpone cream:
– 1 yolk
– 3 tablespoons of sugar
– 200 ml of crème fraîche
– 250 g of mascarpone
– lemon zest
For the finish:
– 500 g of strawberries
– 2 tablespoons of sugar
– 3 oranges
– Half lemon
Preparation of Strawberry and Mascarpone Cake
Prepare the base:
Beat the egg whites until stiff and set aside.
_ Whip the yolks with the sugar and vanillin until they become foamy.
_ Gently add the egg whites and finally add the flour little by little. Be careful not to disassemble the mixture
_ Pour the mixture into a 30 × 30 cm square mold, covered with baking paper.
_ Bake the biscuit dough in a hot oven at 180° for approximately 6-10 minutes. At the end, remove from the oven and let cool.
Meanwhile, prepare the strawberries:
_ Wash the strawberries and cut them into very small cubes.
_ Season the strawberries with orange juice, sugar and a few drops of lemon juice. Mix and reserve.
Now prepare the mascarpone cream:
_ Whip the cream into whipped cream and set aside.
_ Whisk the yolk with the sugar and lemon zest.
_ Add the mascarpone and whisk for a few seconds.
_ Finally add the whipped cream using a spatula.
_ You should obtain a velvety and creamy mixture.
_ You can also prepare it with the Thermomix.
Make the layers:
Now that all the preparations are ready, start to compose the layers:
_ Cut the base of the cake in half.
_ Place half on a serving plate and sprinkle with the strawberry maceration juice (drain with a strainer).
_ Stuffed with half the mascarpone cream and strawberries (drain).
_ Close the filling with the other part of the biscuit and also soak with the strawberry juice.
_ Decorate the surface with the rest of the cream and strawberries.
_ Finish the edges well by spreading the cream on the sides with a spatula.
_ If you wish, decorate the EASY STRAWBERRY CAKE with a pinch of icing sugar and a few mint leaves, or trim the edges so that the garnish looks beautiful.
_ Keep the strawberry and mascarpone cake in the refrigerator before serving.
