Homemade lemon curd
Ingredients
4 egg yolks
3/4 cup white sugar
1/2 cup unsalted butter
1/3 cup freshly squeezed lemon juice
1 Tbsp finely grated lemon peel
1 tsp vanilla essence
* DON’T use store bought lemon juice. It’s very acidic and it will give the lemon curd an after taste.
Instructions
1. In a large bowl add sugar and the grated lemon peel. Whisk very well so that the lemon flavour blends in with the sugar .
2. Add the egg yolks and then mix well for 4 minutes.
3. Transfer this mixture into a stainless steel pot or stainless steel saucepan. Add the freshly squeezed lemon juice. Mix well .
4. Place the pot or sauce pan on the stove .Switch the stove to medium or low heat.
5. Cook for 5-7 minutes. You should get a thick consistency . Keep on stirring using a whisk . (You stir from the beginning until the end , without stopping).
Don’t not leave the pot unattended.
6. When you are about to switch off the stove add butter and vanilla and mix well .
7. Transfer the lemon curd in a container. Let it cool off then refrigerate it
