Ingredients:
- 4 veal shanks (about 1.5 inches thick)

- 1/2 cup all-purpose flour, for dredging
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 carrots, finely chopped
- 2 celery stalks, finely chopped
- 3 cloves garlic, minced
- 1 cup dry white wine
- 1 (14 oz) can diced tomatoes
- 1 cup chicken or beef broth
- 1 bay leaf
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon dried oregano
- Zest of one lemon
- Fresh parsley, for garnish
- Gremolata (optional): A mixture of lemon zest, garlic, and fresh parsley, finely chopped.
Instructions:
- Season and Dredge the Veal Shanks:
- Season the veal shanks generously with salt and pepper.
- Dredge the shanks in flour, shaking off any excess.
- Sauté the Veal Shanks:
- Set the Instant Pot to “Sauté” mode and add the olive oil.
