Cheesy Potato Roll with Meat Sauce
Ingredients:
4-5 medium potatoes (thinly sliced)
1½ cups ground beef or ground meat of choice
1 small onion (finely chopped)
2 cloves garlic (minced)
1 cup marinara or tomato sauce
1 cup shredded mozzarella cheese
½ cup grated parmesan cheese
2 tablespoons olive oil
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon dried oregano or Italian seasoning
Fresh parsley (optional, for garnish)

Instructions:
1. Prepare the Potatoes:
Preheat your oven to 200°C (400°F).
Thinly slice the potatoes.
Arrange them overlapping on a parchment-lined baking sheet to form a rectangular base.
Brush lightly with olive oil, season with salt and pepper.
Bake for about 20 minutes until they start to soften but not fully cooked.
2. Prepare the Meat Filling:
Heat olive oil in a pan.
Sauté onion and garlic until translucent.
Add ground beef and cook until browned.
Stir in tomato sauce, oregano, salt, and pepper.
Let it simmer for about 5–7 minutes. It should be thick, not too watery.
3. Assemble the Roll:
Sprinkle mozzarella and parmesan over the baked potatoes.
Spread the meat mixture evenly on top.
Carefully roll everything up using the parchment paper to help guide it (like rolling a sushi roll).
4. Bake:
Top the roll with extra mozzarella cheese.
Return to the oven and bake for another 15–20 minutes, until the cheese is melted and bubbly.
5. Serve:
Garnish with chopped parsley.
