Ingredients:
- 1 lb. ground beef
- 1/2 cup diced onion
- 1 packet taco seasoning mix
- 2 cups shredded cheddar cheese
- 1 can refried beans (spread easier if you warm them in the microwave)
- 1 cup prepared rice (I used Minute Rice)
- 1 can Mexican blend corn (DRAINED) (you will only use about 1/2 can)
- 4-5 large flour tortillas
- 8 oz of thick chunky salsa (your choice, mild or hot)
Instructions:

Preheat the Oven:
Preheat your oven to 350°F (175°C). This will ensure it’s ready when your casserole is prepared.

Cook the Ground Beef and Onions:
In a large skillet, cook the ground beef over medium-high heat until it’s no longer pink and starts to brown. Add the diced onion to the skillet and sauté until the onions are translucent and fragrant. Drain any excess grease.

Season the Beef:
Stir in the taco seasoning mix, following the package instructions for the amount of water needed. Typically, you’ll need to add some water and simmer until the mixture thickens.

Assemble the Casserole:
In a 9×13-inch baking dish, begin assembling your casserole:
- Start by layering 2-3 tortillas on the bottom of the dish, overlapping them to cover the surface.
- Spread half of the refried beans evenly over the tortillas.
- Add half of the prepared rice as the next layer.
- Sprinkle half of the cooked beef and onion mixture on top.
- Scatter half of the drained Mexican blend corn over the beef.
- Pour half of the salsa over the corn.
- Finally, sprinkle half of the shredded cheddar cheese on top.

Repeat the Layers:
Repeat the layering process with the remaining ingredients, starting with another layer of tortillas.

Bake:
Cover the casserole dish with aluminum foil to prevent excessive browning and bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and the casserole is heated through.

Remove the casserole from the oven and let it cool for a few minutes before serving. Garnish with your choice of toppings, such as sour cream, chopped cilantro, or additional salsa.
