Crispy Parmesan Fried Tomatoes

Ingredients:

4 large firm tomatoes

Salt and pepper, to taste

1/2 cup all-purpose flour

2 large eggs, beaten

1 cup breadcrumbs

1/2 cup grated Parmesan cheese

1 teaspoon dried basil

1 teaspoon dried oregano

Oil for frying (vegetable, canola, or olive)

Instructions:

Prepare the Tomatoes:

Slice the tomatoes into 1/2-inch thick rounds.

Season each slice with salt and pepper.
