Ingredients
4 large eggs
1 cup sugar
2 cups milk
½ cup heavy cream
½ cup shredded coconut (for topping)
1 tsp vanilla extract
2 tbsp cornstarch
A pinch of salt
Instructions
Preheat the oven
Set your oven to 180°C (350°F). Lightly grease or butter your baking dishes or ramekins.
Prepare the custard mixture
In a medium saucepan, whisk together the eggs, sugar, milk, cream, cornstarch, salt, and vanilla extract.
Cook over medium heat, stirring constantly, until the mixture thickens and just begins to bubble. Do not let it boil.
Strain the mixture
Remove from heat and strain the custard through a fine sieve to remove any lumps.
Pour into baking dishes
Divide the custard evenly among the greased dishes or ramekins.
Bake
Bake for 30–35 minutes, or until the custard is set and lightly golden on top.
Add the coconut topping
Once baked, sprinkle the shredded coconut evenly over the top of each custard.
Chill and serve
Allow the custard to cool slightly, then refrigerate for at least 2 hours to set completely.
Serve chilled — perfect with tea or as a stand-alone dessert.
