Banana Bread Cake with Cream Cheese Frosting

Ingredients

Banana Cake

  • ½ cup (1 stick) butter, softened
  • 1½ cups granulated sugar
  • 2 large eggs
  • 1 cup sour cream (full-fat preferred)
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup mashed bananas (about 3 bananas)

Cream Cheese Frosting

  • ½ cup (1 stick) butter, softened
  • 1 bar (8 oz) cream cheese, softened (full-fat preferred)
  • 1 teaspoon vanilla extract
  • 3 cups powdered sugar
  • 2 tablespoons heavy whipping cream

Instructions

  1. Prepare the Cake: Heat oven to 350°F (175°C). Spray a 9×13 baking dish with cooking spray and set aside.
  2. Cream butter and sugar together until light and fluffy (mixture may look crumbly at first, keep mixing until smooth).
  3. Add eggs, sour cream, and vanilla. Beat until creamy.
  4. Add flour, baking soda, and salt. Mix on low just until combined.
  5. Fold in mashed bananas. Spread batter evenly in prepared baking dish.
  6. Bake for 25–35 minutes, or until a toothpick inserted in the center comes out clean or with moist crumbs. Edges and top should be lightly browned.
  7. Let cake cool completely before frosting.

Make the Frosting:

  1. In a large bowl, beat butter and cream cheese until smooth.
  2. Add vanilla, powdered sugar, and heavy cream. Beat until thick, creamy frosting forms.
  3. Adjust consistency with more sugar or milk if needed (frosting should be thick enough to slice cleanly).

Frost & Serve: Spread frosting over cooled cake. Garnish with banana slices and chopped walnuts before serving.
