Ingredients
For the Filling:
8 lasagna noodles, cooked al dente

1 lb fresh crab meat (lump or claw, picked over for shells)

1 cup ricotta cheese

½ cup shredded mozzarella cheese

¼ cup grated Parmesan cheese

1 egg, lightly beaten

2 green onions, finely sliced

1 tbsp fresh parsley, chopped

Zest of 1 lemon

Salt and black pepper, to taste

For the Creamy Parmesan Sauce:
2 tbsp butter

2 tbsp all-purpose flour

2 cups whole milk (warm)

½ cup heavy cream

1 cup grated Parmesan cheese

½ tsp garlic powder

¼ tsp nutmeg (optional)

Salt and pepper, to taste

For Topping:
½ cup shredded mozzarella or Italian cheese blend

Fresh parsley, for garnish

Instructions
Prepare the Filling

In a bowl, combine crab meat, ricotta, mozzarella, Parmesan, egg, green onions, parsley, lemon zest, salt, and pepper. Mix until well combined.

Make the Creamy Parmesan Sauce

In a saucepan, melt butter over medium heat. Whisk in flour to form a roux, cooking for 1–2 minutes.

Slowly whisk in warm milk and heavy cream until smooth and thickened.

Stir in Parmesan, garlic powder, nutmeg, salt, and pepper. Remove from heat.

Assemble the Roll-Ups

Lay out cooked lasagna noodles on a flat surface.

Spread 2–3 tablespoons of crab filling over each noodle, then roll tightly.

Place seam-side down in a greased baking dish.

Add Sauce & Bake

Pour half of the Parmesan sauce into the bottom of the dish.

Arrange roll-ups on top, then cover with remaining sauce.

Sprinkle with mozzarella cheese.

Cover with foil and bake at 375°F (190°C) for 25 minutes. Remove foil and bake another 10 minutes until golden and bubbly.

Serve & Enjoy

Let rest for 5 minutes before serving. Garnish with fresh parsley.

Tips for Success
Use fresh lump crab for the best flavor, but canned crab works in a pinch.

Don’t overcook the noodles — they’ll soften more in the oven.

For extra flavor, add a splash of white wine to the cream sauce.
