1 tsp Old Bay seasoning (or Cajun seasoning)
1/4 tsp smoked paprika
Salt and pepper, to taste
Juice of 1/2 lemon
1 tsp hot sauce (optional, for a kick)

3 large eggs
1 cup half-and-half or whole milk
1/2 cup sour cream or mayonnaise (adds richness)
1 tsp Dijon mustard
1 tbsp chopped fresh parsley
1/2 tsp dried thyme or 1 tsp fresh
1/2 tsp hot sauce (optional)

1 cup shredded sharp cheddar cheese
1/2 cup shredded Monterey Jack or mozzarella
Optional: 2 tbsp grated Parmesan for topping

🧈 Step 1: Prepare the Crust

If using store-bought:

Place the unbaked pie shell in a pie dish and refrigerate until ready to fill.
If making homemade crust:

In a bowl, mix flour, salt, and sugar.
Cut in cold butter using a pastry blender or fork until mixture is crumbly.
Add ice water 1 tbsp at a time, mixing until dough just holds together.
Form into a disc, wrap in plastic, and chill for 30 minutes.
Roll out to fit a 9-inch pie dish, press in, and crimp the edges.
