🍓 Strawberry Shortcake Cheesecake

A dreamy, layered dessert that’s as beautiful as it is delicious!

🍪 Ingredients

🔸 Shortcake Crust:

2 cups crushed golden Oreos (or vanilla wafers)

6 tbsp unsalted butter, melted

🔸 Cheesecake Layer:

3 packages (8 oz each) cream cheese, softened

1 cup granulated sugar

3 large eggs

1 tsp vanilla extract

1 cup sour cream

1 tbsp cornstarch

🔸 Strawberry Layer:

2 cups fresh strawberries, chopped

1/3 cup granulated sugar

2 tbsp cornstarch

1/4 cup water

🔸 Whipped Topping:

1 cup heavy whipping cream

2 tbsp powdered sugar

1/2 tsp vanilla extract

🔸 Shortcake Crumble:

1/2 cup golden Oreos, crushed

1/2 cup freeze-dried strawberries, crushed

2 tbsp butter, melted

👩‍🍳 Instructions

✅ Step 1: Make the Crust

1. Preheat oven to 325°F (160°C).

2. Mix crushed Oreos with melted butter until sandy.

3. Press into a 9-inch springform pan and bake for 10 minutes. Let cool.

✅ Step 2: Cheesecake Filling

1. Beat cream cheese until smooth.

2. Add sugar, then eggs (one at a time).

3. Mix in vanilla, sour cream, and cornstarch.

4. Pour over the cooled crust and smooth the top.

✅ Step 3: Bake the Cheesecake

1. Place pan in a water bath and bake at 325°F for 60–70 minutes.

2. Turn off oven and let rest inside (door ajar) for 1 hour.

3. Cool fully, then refrigerate for at least 6 hours or overnight.

✅ Step 4: Strawberry Topping

1. In a saucepan, combine strawberries, sugar, cornstarch, and water.

2. Cook over medium heat until thick and jammy.

3. Let cool and spread over the chilled cheesecake.

✅ Step 5: Whipped Cream

1. Whip cold cream with powdered sugar and vanilla until stiff peaks form.

2. Pipe or spread around the edges.

✅ Step 6: Shortcake Crumble

1. Mix Oreos, freeze-dried strawberries, and melted butter until crumbly.

2. Sprinkle over the whipped cream.

This dessert is all about layers:
