Ingredients
1.5 lbs flank steak or sirloin, cut into ½-inch strips
2 large green bell peppers, seeded and sliced
1 large red bell pepper, seeded and sliced
1 large yellow onion, sliced

⅓ cup soy sauce (80ml)

1 tablespoon grated fresh ginger

Step by Step Instructions
Place beef strips in the bottom of a 6-quart crockpot.
Add sliced bell peppers and onion over the beef.
In a small bowl, whisk together beef broth, soy sauce, minced garlic, grated ginger, sesame oil, and black pepper.
Pour liquid mixture evenly over ingredients in crockpot.
Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours.
One hour before serving, make a slurry by mixing cornstarch with 2 tablespoons cold water until smooth.
Stir slurry into crockpot, replace lid, and continue cooking until sauce thickens (about 45-60 minutes).
Serve hot over rice or cauliflower rice.
