Glorified Rice

Despite its name, Glorified Rice isn’t just a salad or a pudding—it’s a charming fusion of both. Its light texture and sweet-tart pineapple flavor make it a refreshing counterpoint to heavier meals. Best served chilled, it’s a make-ahead favorite that evokes warm memories and retro appeal.

Ingredients
1 cup white rice, uncooked
2 cups water
3/4 cup heavy whipping cream, chilled
2 (15 oz) cans crushed pineapple with juice
1 ½ cups mini marshmallows
½ cup granulated sugar
maraschino cherries, for garnish
How To Make Glorified Rice
Add 2 cups of water to a small pot and bring to a boil. Stir in rice and reduce heat to low. Cover and simmer for 20 minutes.
As rice cooks, whip the heavy cream until stiff peaks form, then set aside.
Once rice is fully cooked, uncover and stir. Let sit for 10 minutes to cool.
Transfer rice to a large serving bowl and mix in pineapple, marshmallows, and sugar until well combined, then gently fold in whipped cream.
Cover and chill for 3-4 hours.
Garnish with cherries before serving.
