This Creamy Chicken Rice Casserole is a classic for a reason – it’s easy to make, incredibly comforting, and packed with flavor. The combination of tender chicken, fluffy rice, creamy celery soup, and melted cheddar cheese creates a satisfying one-dish meal that the whole family will love.

 

 

 

 

Here’s a cozy, comforting Creamy Chicken Rice Casserole recipe that’s super easy to throw together and perfect for a family dinner:

 

Creamy Chicken Rice Casserole

Ingredients:

2 cups cooked chicken (shredded or cubed)

1 cup uncooked long-grain white rice

2 1/4 cups chicken broth (or water with bouillon)

1 can (10.5 oz) cream of chicken soup

1/2 cup sour cream (optional, for extra creaminess)

1 cup shredded cheddar cheese (plus extra for topping)

1/2 cup milk

1 cup frozen peas and carrots (or mixed veggies)

1/2 tsp garlic powder

1/2 tsp onion powder

Salt & pepper to taste

Optional topping: crushed Ritz crackers, breadcrumbs, or French fried onions

Instructions:

Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

In a large bowl, combine the uncooked rice, cream of chicken soup, milk, sour cream, broth, cheese, peas and carrots, garlic powder, onion powder, salt, and pepper.

Stir in the cooked chicken until everything is well mixed.

Pour the mixture into the prepared baking dish and spread it evenly.

Cover tightly with foil and bake for 50-60 minutes, or until the rice is tender.

Remove foil, sprinkle more cheese (or cracker topping) on top, and bake uncovered for another 10-15 minutes until golden and bubbly.

Let it rest for 5-10 minutes before serving.

Tips:

Use rotisserie chicken to save time.

Swap in brown rice (but increase broth and cooking time).

Add a little cooked bacon or sautéed mushrooms for a flavor boost.
