Simple ingredients, big flavor—just like the Amish tradition of home-cooked goodness 🍽️💛.

🥓 Amish Breakfast Casserole
Ingredients:

1 lb bacon, diced

1 medium onion, chopped

6 eggs, lightly beaten

4 cups frozen shredded hash browns, thawed

2 cups shredded cheddar cheese

1 1/2 cups cottage cheese

1 1/4 cups shredded Swiss cheese

Salt and pepper to taste

Instructions:

Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.

Cook bacon and onion in a skillet over medium heat until bacon is crisp. Drain.

In a large bowl, mix together eggs, hash browns, cheeses, bacon mixture, salt, and pepper.

Pour into baking dish and spread evenly.

Bake uncovered for 35–40 minutes or until the center is set and the top is golden.

Let stand 5–10 minutes before serving.

🥄 Tips:

Can be made the night before and baked in the morning.

Try adding green peppers, mushrooms, or sausage for extra flavor.

Note: This casserole can be made the night before for an even easier morning! Just assemble it, cover, and refrigerate overnight. In the morning, pop it in the oven, and you’ll have a hot, delicious breakfast ready in no time ⏰. Enjoy!
