This hearty potato salad is bursting with flavor, combining creamy, tangy dressing with the crunch of veggies and the richness of eggs—a classic favorite with a twist!
Ingredients:
5 lb Russet potatoes
8 hard-boiled eggs (chopped)
1 ½ cups chopped red onion
1 cup chopped celery
½ cup chopped green pepper
¼ cup dark brown sugar
½ cup sweet pickle relish
3 cups mayonnaise
½ cup mustard
1 tsp salt
½ tsp pepper

Cook Potatoes: Boil unpeeled potatoes in salted water until tender. Cool, then peel and cut into chunks.
Prepare Salad Base: Add chopped eggs, red onion, celery, and green pepper to the potatoes. Toss gently.
Mix Dressing: In a separate bowl, combine brown sugar, pickle relish, mayonnaise, mustard, salt, and pepper. Mix well.
Combine: Pour the dressing over the potato mixture and stir to coat everything evenly.
