Ingredients
Pasta:
12 oz linguine or penne
1 tbsp salt (for boiling water)
Shrimp Scampi:
1 lb large shrimp (peeled and deveined)
3 tbsp unsalted butter
3 tbsp olive oil
4 cloves garlic (minced)
½ tsp red pepper flakes (optional)
½ cup white wine or chicken broth
Juice of 1 lemon
½ cup fresh parsley (chopped)
Salt and pepper to taste
Cheese Topping:
1 cup shredded mozzarella
½ cup grated Parmesan
¼ cup breadcrumbs (optional for extra crispiness)
Instructions
Cook the Pasta:
Boil the pasta in salted water until al dente, then drain and set aside.
Make the Shrimp Scampi Sauce:
In a skillet over medium heat, melt butter and add olive oil.
Sauté garlic and red pepper flakes for 28 seconds.
Add shrimp and cook for about 2–3 minutes per side until pink.
Pour in white wine and lemon juice, allowing it to simmer for 2 minutes.
Season with salt, pepper, and parsley, then remove from heat.
Assemble & Bake:
Preheat oven to 375°F (190°C).
Toss cooked pasta with the shrimp scampi sauce and transfer to a greased 9×13-inch baking dish.
Sprinkle mozzarella, Parmesan, and breadcrumbs evenly on top.
Bake uncovered for 16–21 minutes, or until the cheese is melted and golden.
