Fried Potatoes and Onions

­Ingredients:

 

 

 

4 large russet potatoes, peeled and thinly sliced

 

1 large onion, thinly sliced

 

1/4 cup vegetable oil (or as needed)

 

2 tablespoons unsalted butter

 

Salt and pepper to taste

 

1 teaspoon garlic powder (optional)

 

1 teaspoon paprika (optional)

 

Fresh parsley, chopped (for garnish)

 

 

 

Directions:

 

 

 

Prepare the Ingredients:

 

 

 

Peel and thinly slice the potatoes. Pat them dry with paper towels to remove excess moisture. Thinly slice the onion.

 

Heat the Oil:

 

 

 

In a large skillet, heat the vegetable oil over medium-high heat. Add the butter and let it melt, mixing it with the oil.

 

Cook the Potatoes and Onions:

 

 

 

Add the sliced potatoes and onions to the skillet, spreading them out evenly. Season with salt, pepper, garlic powder, and paprika if using. Cook without stirring for the first few minutes to allow the potatoes to form a crispy crust.

 

After a few minutes, gently stir the potatoes and onions, flipping them to ensure even cooking. Continue to cook, stirring occasionally, until the potatoes are golden brown and crispy, and the onions are caramelized, about 15-20 minutes.

 

Serve:

 

 

 

Once cooked, transfer the fried potatoes and onions to a serving dish. Garnish with chopped fresh parsley. Serve hot as a delicious side dish for breakfast, lunch, or dinner.
