Fresh Southern Peach Cobbler

Ingredients:

 

For the Peach Filling:

 

 

 

8 fresh peaches – peeled, pitted, and sliced into thin wedges

 

¼ cup white sugar

 

¼ cup brown sugar

 

¼ teaspoon ground cinnamon

 

⅛ teaspoon ground nutmeg

 

1 teaspoon fresh lemon juice

 

2 teaspoons cornstarch

 

For the Topping:

 

 

 

1 cup all-purpose flour

 

¼ cup white sugar

 

¼ cup brown sugar

 

1 teaspoon baking powder

 

½ teaspoon salt

 

6 tablespoons unsalted butter, chilled and cut into small pieces

 

¼ cup boiling water

 

For the Cinnamon Sugar:

 

3 tablespoons white sugar

 

1 teaspoon ground cinnamon

 

Directions:

 

Prepare the Peach Filling:

 

 

 

Preheat the Oven: Preheat the oven to 425°F (220°C).

 

Combine Ingredients: In a large bowl, combine the peaches, ¼ cup white sugar, ¼ cup brown sugar, ¼ teaspoon cinnamon, nutmeg, lemon juice, and cornstarch. Toss to coat evenly.

Bake the Peaches: Pour the peach mixture into a 2-quart baking dish and bake in the preheated oven for 10 minutes.

 

Prepare the Topping:

 

 

 

Mix Dry Ingredients: In a large bowl, combine the flour, ¼ cup white sugar, ¼ cup brown sugar, baking powder, and salt.

 

Add Butter: Blend in the butter using your fingertips or a pastry blender until the mixture resembles coarse meal.

 

Add Water: Stir in the boiling water until just combined.

 

Assemble and Bake:

 

 

 

Add the Topping: Remove the peaches from the oven and drop spoonfuls of the topping over them.

 

Sprinkle Cinnamon Sugar: In a small bowl, mix 3 tablespoons white sugar and 1 teaspoon cinnamon together. Sprinkle this mixture over the entire cobbler.

 

Bake: Bake in the preheated oven until the topping is golden, about 30 minutes.
