Fruit and Nut Nougat
Ingredients:
2 cups mixed dried fruits (apricots, cranberries, raisins, etc.), chopped
1 cup mixed nuts (almonds, peanuts, pistachios, etc.), roasted and unsalted
1 cup marshmallow cream (or you can make a sugar syrup for a traditional nougat)
1 cup white chocolate, melted
1 tablespoon butter
1/4 teaspoon vanilla extract (optional)
Instructions:
Prepare the mixture: In a large bowl, mix the chopped dried fruits and roasted nuts. Set aside.
Make the nougat base: In a microwave-safe bowl, melt the white chocolate with butter in 20-second intervals, stirring in between, until smooth. Stir in the marshmallow cream (and vanilla extract if using) until fully combined.
Mix together: Pour the melted chocolate and marshmallow mixture over the fruit and nut mix. Stir well until the fruits and nuts are evenly coated.
Shape the nougat log: Lay out a large piece of plastic wrap or parchment paper. Spoon the mixture onto the paper and use the paper to help shape it into a log.
Chill: Wrap the log tightly and refrigerate for at least 2-3 hours, or until firm enough to slice.
Slice and serve: Once chilled, unwrap and slice the log into rounds. Serve as a sweet snack or dessert.
