Creamy Sausage and Potato Soup

 

 

 

Ingredients:

 

500 g (1 lb) ground sausage

4 medium potatoes, sliced thinly

1 medium onion, diced

3 garlic cloves, minced

4 cups chicken broth

1 cup heavy cream

2 cups kale, chopped

1 red bell pepper, diced

Salt and pepper to taste

1 teaspoon crushed red pepper flakes (optional, for heat)

2 tablespoons olive oil

Instructions:

 

Cook the Sausage: In a large pot, heat the olive oil over medium heat. Add the ground sausage and cook until browned, breaking it up with a spoon. Once cooked, remove the sausage from the pot and set aside.

Sauté the Vegetables: In the same pot, add the diced onion, bell pepper, and garlic. Sauté until the onion becomes translucent, about 3-4 minutes.

Add Potatoes and Broth: Add the sliced potatoes to the pot, then pour in the chicken broth. Bring the mixture to a boil, then reduce the heat and let it simmer for about 10-15 minutes, or until the potatoes are tender.

Add the Cream and Sausage: Stir in the heavy cream and return the cooked sausage to the pot. Mix well and let it simmer for another 5 minutes.

Add Kale: Stir in the chopped kale and cook for another 2-3 minutes until it wilts.

Season: Add salt, pepper, and red pepper flakes (if using) to taste.

Serve: Serve hot with crusty bread or on its own. Enjoy the creamy, hearty flavors!
