Garlic and Herb Roasted Potato Slices
These roasted potato slices are crispy on the outside, tender on the inside, and packed with the flavors of garlic and fresh herbs. They make a perfect side dish for any meal.
Ingredients:
4 large potatoes, peeled and cut into thick slices
3 tablespoons olive oil
4-5 cloves garlic, peeled and lightly smashed
2-3 sprigs of fresh rosemary (or 1 teaspoon dried rosemary)
Salt and pepper to taste
1/2 teaspoon paprika (optional, for extra flavor)
1 tablespoon butter (optional, for extra richness)
Instructions:
Preheat the Oven:
Preheat your oven to 400°F (200°C). Grease a baking sheet or line it with parchment paper.
Prepare the Potatoes:
In a large bowl, toss the potato slices with olive oil, making sure each slice is well coated.
Season the potatoes with salt, pepper, and paprika (if using). Toss again to evenly distribute the seasoning.
Roast the Potatoes:
Arrange the potato slices in a single layer on the prepared baking sheet.
Scatter the smashed garlic cloves and rosemary sprigs over the potatoes.
If using, dot the potato slices with small pieces of butter.
Bake:
Roast the potatoes in the preheated oven for 25-30 minutes, or until the bottoms are golden and crispy.
Flip the potato slices and roast for an additional 15-20 minutes, until both sides are golden brown and the potatoes are cooked through.
Serve:
Remove the roasted potato slices from the oven and transfer them to a serving plate.
Garnish with additional fresh herbs if desired and serve hot.
Tips:
Variations: You can also add other herbs like thyme or parsley for a different flavor profile.
Crispier Potatoes: For extra crispiness, you can increase the oven temperature to 425°F (220°C) during the last 10 minutes of roasting.
Pairing: These potatoes pair well with grilled meats, roasted chicken, or a fresh salad.
These Garlic and Herb Roasted Potato Slices are simple to make but deliver big on flavor. They’re perfect for a cozy dinner or as a side dish for your next gathering. Enjoy!
