Ingredients:
For the Chocolate Base:
1 cup all-purpose flour
1/4 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, melted
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
For the Coconut Layer:
2 cups shredded sweetened coconut
1 can (14 oz) sweetened condensed milk
1 teaspoon vanilla extract
For the Chocolate Topping:
1 1/2 cups semi-sweet chocolate chips
2 tablespoons unsalted butter
1/2 cup toasted coconut flakes (optional, for garnish)
Instructions:
Preheat the Oven:
Preheat your oven to 350°F (175°C).
Line a 9×9-inch baking pan with parchment paper or foil, leaving an overhang for easy removal, and lightly grease it.
Make the Chocolate Base:
In a bowl, whisk together the flour, cocoa powder, baking powder, and salt.
In another large bowl, whisk together the melted butter and sugar until well combined.
Add the eggs and vanilla extract to the butter mixture and whisk until smooth.
Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
Spread the chocolate batter evenly in the prepared baking pan.
Bake the Chocolate Base:
Bake the base in the preheated oven for about 15-20 minutes, or until a toothpick inserted into the center comes out clean.
Allow the base to cool slightly while preparing the coconut layer.
Prepare the Coconut Layer:
In a bowl, mix together the shredded coconut, sweetened condensed milk, and vanilla extract until well combined.
Spread the coconut mixture evenly over the cooled chocolate base.
Bake the Coconut Layer:
Return the pan to the oven and bake for an additional 15-20 minutes, or until the coconut layer is lightly golden and set.
Remove from the oven and let it cool completely.
Prepare the Chocolate Topping:
In a microwave-safe bowl, combine the chocolate chips and butter.
Microwave in 20-second intervals, stirring between each, until the chocolate is fully melted and smooth.
Pour the melted chocolate over the cooled coconut layer, spreading it evenly.
Sprinkle toasted coconut flakes on top if desired.
Chill and Serve:
Place the bars in the refrigerator for at least 1 hour to allow the chocolate topping to set.
Once set, use the parchment paper overhang to lift the bars out of the pan and cut them into squares.
These bars are a delightful combination of rich chocolate and sweet coconut, making them a perfect treat for any occasion. Enjoy!
