Do you ever crave a dessert that is the perfect combination of sweet and salty? Look no further than our mouthwatering Ritz Cracker Salted Caramel Icebox Cake! This delectable no-bake treat will have you craving every bite, with its layers of creamy caramel, crispy Ritz crackers, and just the right amount of salt. But before we dive into the recipe, let me share a personal story that will convince you to save and make this irresistible dessert.
It was a warm summer afternoon, and my family and I were hosting a backyard BBQ. We had grilled burgers and hot dogs, but I wanted to surprise everyone with a showstopping dessert. As I browsed through recipes, I stumbled upon the idea of combining sweet caramel with salty Ritz crackers. I decided to give it a try, and what a pleasant surprise it turned out to be! From the first bite, the creamy caramel and the crispy Ritz crackers perfectly complemented each other, creating a flavor explosion in my mouth. The unique combination of sweet and salty left everyone in awe, and the Ritz Cracker Salted Caramel Icebox Cake quickly became the star of the party. Since then, I have made this delightful dessert countless times, and it never fails to impress.

Ingredients:

– 2 (8-oz) packages cream cheese, softened

– 1 cup heavy cream

– 1 cup granulated sugar

– 1 teaspoon vanilla extract

– 1 cup salted caramel sauce (store-bought or homemade)

– 1.5 sleeves of Ritz crackers (around 48 crackers)

Instructions:

In a large mixing bowl, combine the softened cream cheese, heavy cream, granulated sugar, and vanilla extract. Use an electric mixer to beat the ingredients together until smooth and well combined.

Place 1/3 of the Ritz crackers on bottom of greased 8×8 baking dish. Top with 1/3 cream cheese mixture. Top with 1/3 caramel sauce on top (just drizzle over). Repeat this for 2 more layers, until all ingredients are used.

Cover the baking dish with plastic wrap and refrigerate the cake for at least 4 hours, or preferably overnight. This will allow the Ritz crackers to soften and the flavors to meld together.

Prior to serving, you can garnish the cake with additional salted caramel sauce, whipped cream, or crushed Ritz crackers, if desired.

Slice and serve the Salted Caramel Icebox Cake chilled. Enjoy!
